Can I cut the new growths off my lucky bamboo stalk?

I recently purchased 4 lucky bamboo stalks, and each one has a "new growth" toward the top of the stalk. I'd like my lucky bamboo to grow tall and I'd like to remove the new growths that have sprouted. Can I simply cut the new growths off or do I need to cut the orignial stalk beneath the new growth? I assume there is some way to grow them without having new growths to each side all along the main stalk because mine are about 2 1/2 feet tall and don't have any sprouts along the lower portion of the stalks. Please advise.

If you cut the stalks, be sure to apply melted candle wax at the ends (both ends), because it may rot at the ends and kill the plant.

Look closely at the top of your "Lucky Bamboo" stalk. Does it have a cut end at the top? This is important because a lucky bamboo that has had it's top cut will no longer grow in height or girth. "Lucky Bamboo" that is sold in stores usually has had it's top cut by the supplier. The reasons behind this are both esthetic ( new growth is more attractive) and economic.
